Chopping and peeling and cooking my ass off today

First up was a huge batch of fried taters, smoked sausage, onions and green peppers... that’s for weekday breakfasts and lunches

Now it’s a huge batch of American style tacos with all the extras... Spanish rice, fresh salsa, 4 blend Mexican cheese, lettuce, sour cream, hot sauce and oversized flat bottom shells that stand up straight

I won’t have to spend more than a couple minutes in the kitchen after work all week long
