I'll second this, reverse sear is the way to go. When you sear first you heat the outside of the meat to well past done, it stays hotter and will have more of a gradient towards the middle.

In the KC office this week and just spent my lunch per diem on a variety of rubs and bbq sauces to mule back to Chicago. Getting my sauce game back to respectable.

Looks delicious! Greens are great for ya'. Unfortunately, I've never been able to tolerate collards. I tried tho.' I'd eat everything else on that plate tho'!

I got KFC tonight. It's what the wife wanted. 3 chicken littles for the kid. an 8 pack of chicken with no sides, and 20 hot wings . 40 ****in dollars!
To add the 2 large sides with 4 biscuits another $9. screw that. |
