What's For Dinner? Here's Mine Vol. 3.
Quote:
I just cut up a pork shoulder/butt and seasoning it with cumin, seasoning salt, garlic salt, and coarse pepper. Throw it all in a hot pan to brown up with cilantro, onions and lots of fresh garlic. Cover all peppers in olive oil and broil until charred. Place in a bowl, cover with cling film and sweat. Peel and seed all the peppers, add to meat and use chicken stock to thin it up a bit. |

IMO tomatillos don't add much flavor as they are very watery. I also don't like how it gives the sauce a lighter color. I like a darker green sauce. I use anaheims, serranos and jalapeņos.

Had a Hispanic family post-up next to us at the lake yesterday. Long story less long, because we hooked them up with some items needed to make the park's public grill work, and we treated their kids to some Sea-Doo time, they treated us to some tablitas. Wow, just WOW!!!
An Innerwebz pic of what the meat looks like: They said they got their rib meat at "La Familiar" in Grandview, the pre-marinated kind, and I can assure you I'll be shopping there very soon! They had the whole spread going on, but I stuck to just the ribs and grilled jalapeno peppers! |

I picked up a sugar baby watermelon from the farmers market yesterday and have been munching on that all day. Pretty damn delicious.

Back in the day when we worked at Wolf Creek nuke plant there was a little Hispanic woman who would cook up a mess tacos, burritos, tamales and those rib things her hubby was working construction at the plant. She would have a separate cooler for each item and sell them in the parking lot all neatly wrapped in foil. She would setup at 10:30 and be sold out before noon. They lived in LaCygne and I have often thought to go to the employee parking lot and see if she is still setting up there. It is always having some construction work being done. It was really really good.
