Posole is usually pork shoulder, but you can use chicken. Same with chile verde, it's commonly made with pork or you can substitute for chicken. Whatever you prefer.

I honestly gave menudo several tries, I Can't get over the pork belly texture. It's a like chewing on a sponge.

I can eat scrambled, over easy, sunny side up, poached or hard even soft boiled. My cholesterol is fine also. Happiness is 2 over easy 2 sausage patties extra crispy hash browns and a slice of buttered toast. Yum!

Oh and never any raw uncooked whites that is my one thing about eggs I can't sand if not cooked right. Oh and egg farts.

When i am in a hurry i grab a couple packs of the little two pack sausage biscuits (Tennessee Pride) and a box of the refridgerated gravy (also Tennessee Pride) nuke till fabulous and bam hot sauce on top
