I had a pound of bacon I needed to get rid of so I made a BLT with one and a delicious Bacon and Egg sandwich with the other, it was topped with butter and smothered in yolk.

In honor of my late parents and grandparents, I will attempt to make bland but good old corned beef cabbage carrots, and potatoes. I'll make my mom's Irish soda bread and pistachio pudding she made because it was green. Also got a Boyles corned beef she favored. Marble rye for the Reubens later.

Bean/Cheese Tostadas and Rice. I used the Knorr Caldo De Pollo that Pablo used and it made my rice perfect.
