Last night for dinner I made a prosciutto, mozzarella, roasted red peppers sandwich on a small toasted ciabatta loaf with olive oil and balsamic.

Also had some rotini pasta salad and crinkle cut kettle chips with a glass of Italian red wine.

It was incredible.

Made some pork enchiladas and mexican rice. Basically carnitas enchiladas without the finishing crisp. I've perfected my mexican rice(secret is just Knorr's tomato and chicken bouilon with some doctoring and technique). It's better than restaurant quality and then some. Very happy with that.

I was pretty lazy, so I just did a chicken breast on the rectec. I threw some sweet potatoes and onion on there. Wife roasted some green beans too,

I got the chicken right, so it was good. I'm the only one that likes Sweet Potatoes so that was all me, and they were goooooood. The beans would have been better if I'd blanched them, but ain't nobody got time for that. You can't see, but the grilled onions are under the chicken.

I need to use a filter or something. It looked way better than my picture.

Pretty good and got some stuff out of my fridge.

This combo kicks ass. Would probably be a great mixer for light liquors if you’re so inclined as well

Wife wanted breakfast for lunch after church. She made the bacon and eggs and I did the pancakes. I'd always had the box - just add water pancakes, and I gotta say the little bit of effort to get good ones are worth the effort.

Here is the recipe I used, but they're all over. Just measure the ingredients and do it. I'm a ham fisted moron and seem to make a mess out of everything, but they still turned out good. I seem to struggle getting the right temperature on the skillet. I'm good with fire and meat. the rest of it...nah. So I dug out the ol' infrared thermometer and 360 is the number. FWIW.

Offscreen was some sundry fruit I ate.

EDIT: Wife didn't **** up the bacon, that's how I like it. Crispy bacon for the win. Food snobs be damned.

You’re getting laid tonight because of those pancakes.
