Made this roasted acorn squash with coconut milk soup over Christmas, and it was a huge hit. Ended up having to make it twice.
Just a stock pic, but it looked pretty exactly like this. https://unboundwellness.com/roasted-acorn-squash-soup/ I added one extra carrot, and three strips of thick cut Nueske's applewood smoked bacon (any tick cut bacon would do), chopped, then sprinkled over the top of each cup of soup, along with a little coasrely chopped crisped sage. The crisped sage really adds something, I wouldn't leave it out if possible. Just heat up a little EVOO in a pan, and fry up some fresh sage until it turns a bright green, then remove and run a knife through it. For a creamier soup, I'd add maybe a quarter cup of half and half and 4 pats of butter. Last edited by Megatron96; 01-02-2023 at 07:12 PM.. |
