I'm guessing it has 2 sticks of 2GB installed. Normally you can use a single stick, but performance is actually better with a pair, since it can take advantage of dual-channel.

In this case, considering the price and the performance benefit of going from 8GB to 16GB, I would recommend going with 16GB.

Either 8GB pair: https://www.amazon.com/PC3-12800-DES...xpY2s9dHJ1ZQ==

Or 16GB pair: https://www.amazon.com/1600MHz-PC3L-...NsaWNrPXRydWU=
There’s only 1 stick of RAM in it currently but has 2 slots available. So I should buy a pair and put 2 new ones in, instead of mixing the one old one and one new one? What size would you recommend?

This.

Get a 16GB pair, there's no reason to do anything else.
