All this meatloaf talk inspired me to do the meatloaf twist on the 'KFC failure pile'

slice of meatloaf topped with mashed potatoes and mushroom gravy, surrounded by canned sweet corn and toss it into broiler for a second with shredded cheese on top.

Made pulled pork enchiladas, think Sorce was the inspiration earlier in this thread.

Carmelized some onions and then did a 3/1 split of enchilada/bbq sauce.

He just turned 12. He prefers a cheese enchilada with cheese sauce. I have tried many sauces but have to eat the pan alone. One time I thought we had a winner until the next day leftovers.

Might just be his palate. Your palate changes as you age. Or usually anyway, from what I've read.

Kind of like when i was a kid and I hated my mom's Thanksgiving green bean casserole. Then sometime around my 14th or 15th birthday I suddenly decided i really liked it. The green beans just tasted better somehow. She didn't change anything.

I'd just keep making the version that you think is the best one, and by the time he's 15 he'll probably like it.

Or if you just have to make on he likes right now, consider adding sugar. Like a teaspoon or so.

Good I'll repeat it next time. Just a nice sweetish tie in with the bbq rubbed and smoked pork. And the caramelized onions were an appropriate add.

Are you make scratch mole or buying canned enchilada sauce? This gal makes a quick mole for chicken enchiladas I have used and like well because its fast. I have used dried ancho chilli peppers or Hatch if you can find them. The hardest thing for me was finding the Mexican chocolate. Only difference is I bake them with cheeses of my choice.



A really good one takes a bit more time Is the blond Gal who runs the Americas test kitchen. I cant find the video now but I posted it here before just dont know the thread.

I dont like any of the canned even in Mexican groceries.
