Amazing how simple and tasty you can get with the right spices. Just some rice and meat to go along.
Big kick on Korean Ginger Beef and Rogan Josh Chicken lately. |

It’s a clean out the fridge to make room for the incoming leftovers kinda night
As a bonus, it’s kind of a trip around the world... 7-8 toasted cheese ravioli with marinara, 2 frozen eggs rolls that lingered too long and a big ol Caesar salad with a good handful of sautéed chicken breast from last night |

6 plump lamb chops with a mint peso sauce and blistered baby potatoes flash fried a golden brown. Had a nice glass of Cab Sav to go along for the ride.
Fan-tastic!!! |

I've been using the Instant Pot I bought during the summer a lot. I promised Meesh Meesh I'd bring him back some turkey from Thanksgiving in Frankfort, but the crew there wiped it all out. So Friday I got out a little frozen smoked turkey breast (they sell them at Aldi and they're wonderful), thawed it out and cooked it in the instant pot with some sliced carrots, chopped celery and onion. Made some gravy with the drippings and it was fan-tastic. And only took about an hour to cook. Meesh liked it a lot. Also made my grandma's famous lemon cake and it was wonderful too. This time I used seven up instead of water in the cake batter and it was really tasty. I wonder how much weight I'm going to gain this week?

Tonight’s an old favorite, fried tilapia breaded in corn meal and flour
With a simple can of baked beans and sliced onion... and of course real Sriracha applied liberally on the fish But tomorrow’s the real project, shepherds pie Fresh beef, best beef stock I could find, frozen peas, fresh carrot, onion, Worcestershire sauce, tomato paste, garlic, and fresh mashed taters topped with cheddar and a dusting of paprika Making enough to last several days... hearty work lunches, easy nuke after work weekday dinners, a breakfast or two etc Comfort food on steroids |
