I know the chicken isn't great looking, but it was cold outside, so I baked the skinless/boneless thighs rather than grilling them. Thighs are moist enough, that they do very well being baked and retain a ton of moisture.
Lemon pepper chicken with a side of roasted butternut squash/brussel sprouts/pecans/and dried cranberries in a light balsamic glaze. I'm not much into the whole plating thing, but the hot "salad" was fantastic. Will make it again. Probably as a side for Thanksgiving. |

Well, you gotta like sprouts of course, but they have a slight bitterness that is offset by the sweetness of the other three ingredients. Agree on the sear. I was doing three things at once around the house, so I just took the easy route this time.

yeah, that's totally a personal preference thing. I like dark meat in poultry. I eat the dark meat at thanksgiving. My wife only likes the white meat. I'll eat chicken breast, particularly if I'm grilling them. Baking them generally sucks the moisture out unless they are baked in some sauce or braised.
