I forgot to take pics.
Brined (beer) and seasoned pork loin roast (3 peices @1.5 lbs each) Studded with pink garlic cloves, rubbed with mayo, and seasoned with smoked chocolate habanero dust, chili powder, paprika, and sea salt smoked using cherry and red oak for 1.5 hr. very low Sliced deli super thin (not shaved) and served on Ball Park Hawaiian buns with grilled peppers, eggplant, squash and onions as garnishes. Russet potatoes, skinned removed. Fine, fine chop. I Julienne and run them through my food processor's shredding blade using the smallest feed tube. Rinse and rinse again to remove starch. Squeeze potatoes in a tea towel until you can't remove anymore water. Microwave until steaming to stop enzyme reaction. Let cool and then mix well with a bit of salt. Add the oil of your choice and mix. Form very tightly and bake at 350 for about 25 minutes. I usually make several batches for freezing after stopping the enzyme reaction. This sounds like a lot of work, but it's actually quite easy. |

If you smoke (or roast) an oblong piece of protein then the ends get overcooked and dry while the center is raw. By cutting the loin into 3 pieces it cooks more evenly (heat applied on all four sides of a square vs. a rectangle), plus it's quicker. Over or undercooked pork loin (either type) suck. Modern pork loins are much too lean to overcook the ends while bringing the center to 145 degrees. I was out of some spices but jet.com delivered today. |

Nah. He was just here to post gay porn Or horrible porn in threads. He'd get banned, make a new logon rinse and repeat. Accordingly they moved the post count up. That way if he was going to spam the board with horrible porn he was going to have to work for it. Seems to have fixed the problem.
