Last night on my drive from Herndon VA to Tulsa OK, I stopped for dinner in Memphis at Central BBQ. I made it just in time at 8:30pm as they close by 9pm. Place still had a line. I love the outdoor seating under clear plastic with the heat lamps. Lot's of college age kids there.
The service was great as they give you a number and bring your meal to you and clean up after you without any tips expected. Had the pulled pork with mild sauce and added some of the hot later, the mac and cheese side along with the BBQ beans with a roll. I also ordered a sausage link. The pulled pork and sides were out of this world. Some of the best I've ever had. The sausage link, while incredible smokey in flavor, was just to greasy for my tastes and I left about 1/3 unfinished. Would give the place a solid 8.5 Bill was only $18.68 and that INCLUDES a Heineken tall boy in a can. |

Freeze it then one day you will go mining in the ice box and discover it 7 years later. Wing it into the Waste Management bin. This is the problem with a big pork butt or shoulder. you run out of ideas what to do different with it. Its good stuff but I always wind up with to big a cut.

Lunch today. Shrimp enchilada. Cast iron medium size shrimp on top of cheese, black beans, rice, onions, homemade salsa, jalapeno sauce. Roll this up and top with red enchilada sauce.

I only stopped in Memphis for dinner. Drove all night with a few sleep stops all the way to Tulsa OK by 7:30 am. 1,315 miles in 26 1/2 hours

What's For Dinner? Here's Mine Vol. 3.
Was at Costco this afternoon, and they had (prime!?) whole brisket for $2.99/lb. This is a HUGE deal to me because it's literally the first time I've seen whole briskets since moving here in 2010, and everywhere else the flats are usually $6+/lb.
So I'll be smoking tomorrow. |
