I use this simple mix for a batch for a family member each year.

Old Trapper is the most reasonably priced and good tasting brand of jerky I've found. Get a jumbo bag at QT or Hyvee for $11.

One of the brands at QT is awful. It's like chewing seasoned fat. Olberta, I think. Time lapses and I think I got a bad batch, only to realize its flavored gristle.
