Making pre-made lunches for the week.
Spice rubbed whole chicken, smoked. Farmhouse IPA I brought back from my visit to KC last weekend. Chicken shredded, layered over dressing, black beans, grilled corn, greens, shredded carrot on top. Ready to eat on the go all week. ] Reward yourself for eating healthy all week with some tacos on the weekend. Profit. |

Nice. Do you do the chicken cold, or how do you reheat? I generally shy away from poultry for work because we only have a microwave, and microwaved poultry is terribad. And do you something at the end to crisp up the chicken skin, or do you just discard it? I can never get crispy smoked chicken... It's the holy grail. |

Obviously you can dress that salad as you like. I wish I had some sliced pickled pepperoncini in there. EDIT: for this jarred salad, I don't worry about the skin. For a warm smoked chicken dish, I'll pull the heat plate out of the BGE and put it back on to crisp the skin. I didn't brine this chicken or anything, it's just lunch, which is the most throwaway meal, imo. |

We went and picked some sweet corn after supper. It's not irrigated which usually means it's an epic failure but this was pretty dang good. Irrigated stuff should be ready in a week or so.
My daughter likes it. |

I'm extremely fortunate to be able to work from home, but with my office right off the kitchen, if I don't have stuff already prepared for myself I'll walk around the house grazing like everyday is a Sunday. I've been really bad about that recently.
