Turned out good, but I definitely needed to let it sit out at room temp for a little while longer and let it rest for 20 mins next time around. Only got 10 this time. All that being said, still a tasty chunk o meat

Wet brined then smoked a salmon (clipped a desk fan to a cabinet to air dry, BBQ ingenuity)

Did poke bowls with sushi rice, spicy mayo, teriyaki and a gang of veg on Sat then a bagel with cream cheese, capers, and leftover salmon this morning

I got the most beautiful poke bowl of my life a couple weeks ago. Marlin and tuna had come out of the sea that morning. Fresh veg. Just a beautiful bowl

Walked it down to the beach to eat while watching the ocean come in. Everything was set up perfect and I opened the bag with the bowl to find only chopsticks

I pretty much did a combo of eating with my hands and using the chopsticks like one of those wooden spoon things that comes with a frozen malt at a little league game

So figured I'd watch some vids and practice at home in case I'm ever in that situation again
