Turned out good, but I definitely needed to let it sit out at room temp for a little while longer and let it rest for 20 mins next time around. Only got 10 this time. All that being said, still a tasty chunk o meat

Wet brined then smoked a salmon (clipped a desk fan to a cabinet to air dry, BBQ ingenuity)
Did poke bowls with sushi rice, spicy mayo, teriyaki and a gang of veg on Sat then a bagel with cream cheese, capers, and leftover salmon this morning |
