Dry brining the turkey with just kosher salt, then oven roast. I've done dry brine with chicken on the smoker and liked the results. Seems like this should work equally well. If not.....plenty of sides and desserts.

I've dry brined birds for a long time, just started wet brining when restricting salts.

Decided to do things a little different this year. Getting ready to throw some nice thick Ribeyes on the grill. Still made a few traditional sides but just didn't feel like turkey.
Probably go with turkey for Christmas. |
