Italian roll ups with Boar's Head hard salami, Provolone and pepperoni, lettuce, tomatoes applewood smoked bacon, Gorgonzola, and ripe olives and St Elmo's vinigarette.

Citrus Scallops with Citrus Ginger Quinoa
Red Ruby Grapefruit for Appetizer Quinoa cooked in orange zest, lemon zest, juice squeezed from orange and half of lemon; grated fresh ginger, a bit of crushed red pepper topped with basil. Delicious! Scallops seared in butter, set aside; then glazed pan with fresh squeezed orange, some lemon; orange & lemon zest, tad of ginger and garlic and some chicken broth. Delicious. I like. Looks refreshing. Brutal here. Just brutal. But a daily swim in my pool makes it worth it.

Hot Italian beef sammiches.
I made a roast beef for the first time. Used a 5 lb rump roast. Seasoned it with salt/pepper/garlic powder. Set it on top of carrots, onions, and celery with a little water. Roasted it covered for 2 hours at 375. Took it out, sliced it warm very very thin on my meat slicer. Then dipped the sliced meat back in the au ju, placed on Italian rolls, topped with some giardinaira. I had mine wet (dipped) and the wife just dipped hers bite by bite. No pics but damned good grub. |
