I'm kindof of the mind that you just have to take his damn head off.
He's not a 'mystic' zombie or whoever the hell you'd want to classify the wights; he's a...uh...potion zombie. I'm not sure what impact mystic shit like dragonglass or valyrian steel would have on him.
Just use regular old steel to take his head off, then burn the body.
