No pics, but I made carnitas tortas the other night.

Now carnitas shouldn't be that wet, so after shredding the meat, I put it on a broiler plate and broiled it in the oven for 5 minutes to crisp it up and give it a little "bark."
Went to a local panaderia and bought some bolillos. Made guac to spread on the bread. Made up a mexican slaw with cabbage, green onions, cilantro and lime juice. Then quick pickled some radishes for an extra topping using this recipe:
