I infused a handle of Pinnacle vodka with broken up cinnamon about 3 weeks ago, filtered it, and mixed most of it with a gallon of cinnamon apple cider. Left in fridge in a beverage dispenser for a week. Broke into yesterday when it was 60 and as rain and snow came it it started tasting even better.

It's 10AM and somewhere in the Atlantic, it is noon, and even at this hour it's still really tasty.

For any gin drinkers, try the Empress 1908...it's known for its unique color but the flavor is nice..

There's a Jameson Cold Brew.... a while back I thought it was too harsh and didn't get any coffee out of it (a coworker thought it was really smooth and tasty, but is a bourbon drinker).

Since i've been drinking more (and much smoother) bourbon lately though, I took a drink of the Jameson the other day and I've definitely acquired some taste for it. Doesn't seem nearly as harsh and has some good coffee to it.... it has potential.
